Easy Chile Recipe

6 servings

Ingredients:

1 lb extra lean ground beef
1 pkg dry chili mix
1 small yellow onion, (about 1 cup chopped)
15 oz can pinto beans
15 oz can kidney beans, do not drain
14.5 oz can diced tomatoes, do not drain
2 oz real bacon pieces

Easy Chile Recipe Instructions:

  • Brown meat well.
  • Chop onion and add it and chili packet to meat.
  • Cook 1-2 minutes and then add all other ingredients to skillet.
  • Cover and simmer until the rest of your dinner is done, stirring occasionally.

Pantry Chili Recipe

serves about 10

Ingredients:

1 lb chicken breast meat
1 onion, chopped
2 cloves garlic (or 1 tsp bottled minced)
1 can pork n’ beans (about 20 oz)
15 oz can diced tomatoes
15 oz can black beans
15 oz can kidney beans
15 oz can french cut green beans
15 oz can corn
1 packet dry chili seasoning

Pantry Chili Recipe Instructions:

  • Fry chicken in oil with onion and garlic in a large pot until chicken is cooked through.
  • Add all other ingredients (do not drain anything) and heat through.

Kimra's TexMex Chicken Chili Recipe

Makes 4 servings

Ingredients:

1 Tbsp olive oil (pantry item)
1 lb boneless chicken breast, cut in bite-sized pieces
¼ cup yellow onion, chopped
1 tsp better than bouillon, chicken or 1 bouillon cube (pantry item)
1 can chopped green chilies (4 oz)
19 oz can white kidney beans, NOT drained
1 tsp garlic powder (pantry item)
1 tsp ground cumin (pantry item)
½ tsp oregano (pantry item)
¼ tsp dried cilantro
1/8 tsp ground red pepper (or to taste)
¾ cup shredded Monterey Jack Cheese
2-3 sliced green onions

Tex Mex Chicken Chili Recipe Instructions:

  • Heat oil in saucepan over medium heat and add chicken: cook about 4 minutes.
  • Add onion and cook 2 minutes.
  • Stir in 1 cup water and all other ingredients (except cheese and green onion)
  • Cover, and simmer 30 minutes.
  • Garnish with cheese and onions.
  • Stir things up with this Tex Mex chili recipe!
